This chicken and rice casserole is the type of casserole that you can make all year round. Tender and juicy chicken breasts and fluffy rice together in a creamy sauce. I serve this by itself, but you are welcome to enjoy this with a simple side salad or your favourite steamed/roasted veggies. Easy, filling, and a great weeknight dinner idea, no doubt why this easily became a regular on our weekly rotation.
1 c. long-grain white rice uncooked
1 ½ c. water
4 chicken breasts
10 oz. cream of mushroom soup condensed
1 package onion soup mix or use homemade
How to make 4 Ingredient Chicken & Rice Casserole
Step 1: Prepare the oven. Preheat it to 325 degrees F.
Step 2: Using cooking spray, grease a 9 x 13-inch pan. Lay the chicken breasts on the prepared pan and sprinkle with salt and pepper.
Step 3: Over the chicken, pour the uncooked rice and sprinkle with onion soup mix.
Step 4: Mix the mushroom soup with 1 1/2 c. water until well blended, then pour this over the chicken.
Step 5: Tent the casserole and place it in the preheated oven. Bake for about an hour and fifteen minutes or until the rice is tender.
Adjust the cooking time if needed.
