These French treats never fail to amaze me every time I have them! They are just the perfect treats ever! Serve these to your guests, and I’m sure they are going to love them!
Ingredients:
CHOUX PASTRY
1 c plain/all-purpose flour
4 large Eggs (55-60 grams/2 ounces each), at room temperature
100 grams / 7 tablespoons unsalted butter, cut into 1 cm / 1/2-inch cubes
A pinch of cooking/kosher salt
1 c water
SHINY CHOCOLATE GLAZE:
3 1/2 tsp corn syrup or liquid glucose
2/3 c thickened/heavy cream
100 grams/ 3.5 ounces 70% cocoa dark chocolate block, finely chopped
STABILISED CHANTILLY CREAM
2 teaspoons vanilla bean paste or extract or, 2 vanilla pods
1 2/3 c icing sugar/powdered sugar, sifted
1 c mascarpone (40%+ fat)
3 c thickened/heavy cream or whipping cream (min 35% fat)
Directions:
Prepare the oven and preheat it to 175 degrees C or 350 degrees F.
Place a rack on the 3rd layer on top and another one on the lower part.
Apply cooking spray and line with parchment paper the inside of 3 trays.
For the Choux Pastry:
Place a saucepan on the stove and turn the heat to medium. Add butter and allow it to melt. Add water and let it simmer.
Add salt and flour, then whisk and cook for a few seconds until it forms into a sticky ball.
Gradually add the eggs and beat every addition until well blended.
Move the mixture inside a piping bag and use a 15mm star tip.
Pipe the mixture onto the prepared baking trays until you get 20 logs out of it.
To Bake:
Place the trays in the preheated oven and bake for about 45 minutes.
After 30 minutes, open the oven and let the steam go out for about 2 seconds, then finish baking.
Remove from the oven and let the buns rest for a few minutes.
For the Glaze:
Place a pan on the stove and turn the heat to medium. Add chocolate and cream, then stir and cook until melted.
Remove from the heat and move the mixture into a large bowl.
To Assemble:
Add the eclairs into the bowl with the melted chocolate to coat.
Put them back into the trays and let them chill in the fridge for half an hour.
Decorate the eclairs with whipped cream.
Serve and enjoy!
