This Rotel Dip is my favorite! Every time I have friends over or just a simple family gathering, I always make sure to have this dip! I like serving it with tortilla chips or sliced carrots and celery! You have got to give this recipe a try! I’m sure you are going to love it! This dip is ready for serving in just 20 minutes. Enjoy!
Ingredients:
1 can Rotel tomatoes (original or mild) 284 ml
3 c shredded cheddar cheese
1-pound lean ground beef
1½ c half and a half (you can sub evaporated or whole milk)
½ tsp chili powder or taco seasoning
3 tbsp all-purpose flour
tortilla chips for serving
salt to taste
Directions:
Place a large skillet on the stove and turn the heat to medium-high. Add the ground beef, then cook for a few minutes until crumbly and brown.
Add the taco seasoning and flour, then stir and cook for about a minute.
Stir in the tomatoes and half & half until well combined. Cook for a few minutes until the texture becomes thick.
Add cheese and stir until melted completely. Add more seasonings if needed. Make sure to taste first before adding anything. Remove from the heat. Enjoy!
Notes:
You can use pepper jack cheese for this recipe instead of cheddar cheese.
You can use shredded chicken, shredded turkey, or ground sausage instead of ground beef.
You can use evaporated milk instead of half & half.
Place any leftover dip in an airtight container, then put it in the fridge. It can last up to 4 days. Reheat for a few minutes in the microwave before serving again.
Feel free to add chili powder, hot sauce, or anything spicy to this dip.
Serve this dip with tortilla chips!
You can serve this dip with vegetable sticks if you prefer.
