This Asian Cucumber Salad is a great side dish for any meal. Super easy and quick to prepare with only a few simple ingredients and steps. The simple salad dressing gives so much much flavour to the fresh cucumber, onion slices, and green onion. Tangy and sweet with just a hint of kick from red chilli flakes.
I love how fresh and light this salad is compared to the creamy Cucumber salad. Even if you are used to the creamy version, I am pretty sure that you’ll enjoy this Asian Cucumber variant. It is not surprising that my family receives this well. The perfect salad to serve alongside your everyday meal.
This has been my go-to side dish for barbeque and potlucks. Great during summer because of the cucumber’s cooling property but you can make this any time of the year.
Ingredients
2-3 English Cucumber sliced
1 Red onion sliced
1/3 c Green Onion chopped
2 tbsp Toasted Sesame Seeds
Asian Salad Dressing:
2 tbsp Rice Vinegar
1/2 tsp Toasted Sesame Oil
1/2 tbsp Soy Sauce
1 tbsp Sugar
1/4 tsp Red Chilli Flakes
How to make Asian Cucumber Salad
Step 1: Combine the ingredients for salad dressing; rice vinegar, toasted sesame oil, soy sauce, sugar, and red chilli flakes. Add a bit more sugar the dressing ends up too sour or salty.
Step 2: Add the cucumber, onion, chopped green onion, and sesame seeds in a big salad bowl.
Step 3: Drizzle over the salad dressing and toss to coat before serving. Enjoy!
