INGREDIENTS

1 small wheel of brie (about 6 to 8 inches), chilled
1/4 cup dried cranberries
1/4 cup chopped walnuts
1 sheet frozen puff pastry, thawed, plus extra for (optional) design
1 egg, beaten with
1 teaspoon water

How to make Baked Stuffed Brie with Cranberries & Walnuts

Step 1: With a sharp paring knife, score the side of the brie wheel all the way around. Slice directly on the equator through the rind. Then, wrap a long piece of string or dental floss around the newly made cut and circle one end of the string over the other like a half knot. Pull the ends in the opposite direction and cut the brie in half.

Step 2: Squeeze the dried cranberries on the slice side and the walnuts on the other. Then, immediately put the sides back and press back the stuff that fell out.

Step 3: On a floured surface, roll out a thawed sheet of puff pastry to about 1/8-inch thick and put the brie in the middle. Carefully pull up the edges of the pastry to make sure that you have enough dough to completely wrap the brie. Trim the edges if needed.

Step 4: Brush the dough with the egg wash and fold one end over the brie followed by the other side. Completely wrap the brie by folding the other edges of the dough. You can trim the excess dough if needed. Then, flip the brie, seam at the bottom, and press the sides gently to snug the dough against the brie. Again, brush the top and sides with egg wash.

Step 5: Use a cold almost frozen dough if you choose to decorate the brie with cut-out shapes to ensure sharp lines. Then, lightly brush with egg wash and put the brie in the freezer for at least an hour.

Step 6: Prepare the oven. Preheat it to 425 degrees F or 220 degrees C. And using a parchment paper, line a rimmed baking sheet.

Step 7: Transfer the brie on the prepared baking dish and place it inside the preheated oven. Make sure to put the dish on the center rack. Bake for 20 minutes or until browned and the cheese is leaking. Only on rare occasions that the brie will not leak through but it’ll take only 20 to 25 minutes until the cheese is melted and the pastry is browned.
