A pretty simple, quick beef and cheese Chimichanga. All you need are a few simple and readily available ingredients to make it. These are baked real quick and it is yours in 15 minutes! Chimichanga is filled with seasoned beef and jalapenos, cheese, and all the incredible flavors you can ask for. The ultimate comfort food in a wrap. You can serve this with your favorite toppings like lettuce, salsa, or sour cream. It is gooey, cheesy, meaty, perfectly crisp on the outside, with oh so delicious filling. Every bite is amazing! The flavors, the spice, will tickle your taste buds and will leave you asking for more!
1 pound ground beef
1 can (16 ounces) refried beans
1/2 cup finely chopped onion
3 cans (8 ounces each) tomato sauce, divided
2 teaspoons chili powder
1 teaspoon minced garlic
1/2 teaspoon ground cumin
12 flour tortillas (10 inches), warmed
1 can (4 ounces) chopped green chilies
1 can (4 ounces) chopped jalapeno peppers
Oil for deep-fat frying
1-1/2 cups shredded cheddar cheese
How to make Beef and Cheese Chimichanga
Step 1: Cook the beef in a large skillet over medium heat until the beef is no longer pink.
Step 2: Then, stir in the beans, onions, half cup of tomato sauce, chili powder, garlic, and cumin.
Step 3: On each center of tortilla, spoon about 1/3 cup of the beef mixture. Fold in the edge of the tortilla, then, the other edge over to cover the filling and roll-up. Secure the rolls with toothpicks.
Step 4: Combine the chilis, peppers, and the rest of the tomato sauce in a large saucepan. Heat the mixture through.
Step 5: Heat an inch of oil in an electric skillet or deep-fat fryer to 375 degrees.
Step 6: Once heated, fry the chimichangas for about 1 1/2 to 2 minutes on both sides or until browned.
Step 7: Transfer the chimichangas on paper towels to drain.
Step 8: Sprinkle the chimichangas with cheese and serve with sauce. Enjoy!
