This melt-in-your-mouth Beef Short Ribs with savoury, smooth, and thick sauce is the best! Enjoy the yuletide season with your family and a plate of these incredibly delicious ribs.
Ingredients
3 tbsp olive oil
8 meaty beef short ribs
3 c semi-circle slices of onions 1/4″ thick
4 tbsp tomato paste
10 oz dark ale or stout beer
3 sprigs fresh thyme left on the stem
3 sprigs flat-leaf parsley left on the stems
1 1/2 qt. vegetable stock
1 tbsp Worcestershire sauce
1/4 c 1/2 stick unsalted butter
1/4 c + 2 tbsp all-purpose flour
Salt and pepper to taste
How to make Beef Short Ribs
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Heat olive oil in an oven-safe Dutch oven over medium heat. Once the oil is hot, add the ribs and sear both sides. If needed, work in batches. Once done, transfer the seared ribs on a clean plate. Set aside.
Step 3: Cook the onions in the same Dutch oven until soft. Add in the tomato paste and stir to evenly distribute. Pour in the ale or beer and scrape up the crusty bits from the bottom of the pan. Let it boil until half of the liquid has disappeared.
Step 4: Add the thyme, parsley, stock, and Worcestershire sauce into the Dutch oven and stir. Add the ribs back and slightly cover the Dutch oven.
Step 5: Place in the preheated oven. Cook for about 90 minutes to 2 hours until the meat is cooked through. Halfway through cooking, flip the meat.
Step 6: Once done, take the ribs out of the oven and onto a clean plate. Allow the ribs to rest and discard the thyme and parsley stems. In a large glass bowl, transfer the liquid, skimming the fat off that floats to the top.
Step 7: Once the ribs are cool enough to handle, separate the bones, fat, gristle, and sinew. Using two forks, shred the heat and set aside.
Step 8: Melt butter in the same Dutch oven over medium heat. Once the butter has melted, whisk in the flour until the lumps are gone.
Step 9: Gradually pour in the liquid, stir, and bring to a simmer. Allow the sauce to thicken. To taste, season with salt and pepper.
Step 10: Add the meat and stir. Serve immediately with mashed potatoes.
