Blue Ribbon Blueberry Coffee Cake

I usually make this the night before and in the morning I just pop it in the oven and get ready for breakfast. And this is an excellent recipe, either you want to make a cake or Blueberry Coffee muffins this is great to use. A killer recipe that is so good! A keeper. My kids love this, my husband is obsessed with the muffin version, and I enjoyed the cake. I have been keeping this recipe, it is very useful, easy, and quick to make. This is a winner, a must-try!


1 egg, beaten
1/2 cup sugar
1 1/4 cups flour
2 teaspoons baking powder
3/4 teaspoon salt
1/2 cup milk
3 tablespoons butter, melted
1 cups blueberries, fresh

For the Topping:

1 tablespoon butter, melted
2 tablespoons sugar

How to make Blue Ribbon Blueberry Coffee Cake

Step 1: Place the egg and sugar in a mixing bowl. Beat until thick.

Step 2: Combine the flour, baking powder, and salt in another bowl.

Step 3: Mix the flour and egg mixture alternately. Make sure to beat after every addition until combined.

Step 4: Then, stir in the melted butter and fold in the blueberries.

Step 5: Slowly pour the batter into a floured and greased 8-inch square baking pan.

Step 6: Sprinkle over two tablespoons of sugar.

Step 7: Place inside the fridge, covered, and chill overnight.

Step 8: When ready to bake, prepare the oven. Preheat it to 350 degrees.

Step 9: Put the pan inside the preheated oven and bake for 35 minutes or until the top springs back when lightly pressed.

Step 10: Once done, remove from the oven and brush the top of the cake with the rest of the butter.

Step 11: Let the cake cool before serving. Enjoy!

Cook’s note: When using this recipe to make muffins, bake them for about 18 to 20 minutes. Check first if the top springs back when lightly touched before removing from the oven.
