What makes this the perfect breakfast casserole? Well, the answer is, this is filled with your fave breakfast must-haves from hash browns, eggs, ham, Swiss, and cheddar cheese. This is a rich breakfast excellent for weekends, holidays, even celebrations!
Ingredients
1 (20 ounces)pkg. refrigerated shredded hash browns
8 ounces diced ham, break up any clumps
12 large eggs
1 1/2 c. half and half
1 c. shredded Swiss cheese
1 c. shredded medium or sharp cheddar cheese
2 1/2 tablespoons chopped fresh parsley
1/3 c. chopped green onions
Salt and pepper, to taste
How to make Breakfast Casserole
Step 1: Prepare the oven. Preheat it to 350 degrees. Using nonstick cooking spray, grease a 13 x 9-inch baking dish.
Step 2: In a large 12-inch nonstick skillet, melt the butter over medium-high heat. Once the butter has melted, spread the hash browns in the pan into an even layer. Sprinkle with salt and pepper, then cook for about 6 to 8 minutes until golden brown. Flip and cook the other side for additional 3 minutes.
Step 3: When done, transfer the hash browns into the prepared dish and set them aside.
Step 4: To a large mixing bowl, add the eggs. Break the yolks and whisk using a fork until mixed. Add the half-and-half followed by the cheddar, Swiss, ham, green onions, parsley. To taste, season with salt and pepper. Stir well, then evenly pour this over the hash browns. Using a spatula, spread the layer to even out the top.
Step 5: Place in the preheated oven and bake for approximately 40 to 50 minutes or until the middle of the casserole is just set. Remove from the oven when done and allow it to cool for about 5 minutes.
Step 6: slice and serve. Enjoy!
Notes:
1. This recipe can also be made using 1 (24-ounces) bag of frozen hash browns. Make sure to thaw the hash brown before using. Add this to the casserole (skipping the saute step with the butter) and carry on as directed.
2. Feel free to make this ahead. Prep this casserole through step 4, then cover and place in the fridge. The next day, take it out of the fridge while preheating the oven. Bake the casserole as directed, adding about 10 – 15 minutes to the bake.
Variations:
1. You can use other smooth melting cheese for this recipe such as Monterey jack, muenster, provolone, Colby, pepper jack, gruyere, etc.
2. Feel free to substitute the ham for cooked bacon or diced Canadian bacon.
3. You can even add veggies to this casserole if desired, like sautéed mushrooms or bell peppers.
4. You can even try swapping ham with cooked breakfast sausage or cooked Italian sausage.
5. Even use other herbs.
6. I like serving a slice of this casserole topped with sliced or diced avocado and/or tomatoes.
7. Make it even fancier by topping it with warm hollandaise sauce.
