10 slices bacon halved
1 yellow onion finely diced
1/2 green bell pepper finely diced
54 oz can pork and beans or the equivalent number of smaller cans
4 tbsp ketchup
1/4 cup molasses
2/3 cup brown sugar
1/4 cup cider vinegar
2 tsp dry mustard

Step 1: In a skillet, add the bacon and cook about half-way through. Transfer onto paper towels to drain and set aside.

Step 2: Prepare the oven. Set the rack on the lower-middle position before preheating the oven to 325 degrees.

Step 3: Heat about 2 tablespoons of the bacon grease in a deep skillet or you can also use butter over medium heat. Once hot, sautee the onion and green pepper for about 5 minutes or until softened.

Step 4: Stir in the rest of the ingredients and simmer for about a minute or so.

Step 5: Meanwhile, grease well a 13 x 9-inch baking dish.

Step 6: Arrange the beans into the prepared baking dish. On top of the beans, lay the cooked bacon.

Step 7: Place inside the preheated oven and bake for about 2 to 3 hours until you reach your preferred consistency.

Step 8: Remove from the oven and allow the beans to rest at least 5 minutes before serving. Enjoy!
