All you need are a few simple, easy-to-find ingredients to make this Cabbage Salad with Corn. A breeze to make and super delicious! The perfect side dish that pairs so well with just about anything!

Bursting with flavours and vitamins and a combination of my favourite cabbage, crunchy cucumbers, and sweet corn. A nice rotation to your usual side dish that you can make in under fifteen minutes from start to finish! If you adore the simplicity of cabbage, I am sure you’ll dig this salad. Don’t forget that it’s healthy, too which is excellent for the entire family!

I love recipes that I can pull off easily and quickly just like this simple and delicious Cabbage Salad with Corn. Not to mention the addition of cucumber, corn, and dill makes this so much interesting. A must for every family! Note that when picking the right cabbage that you have to chose a circular cabbage with the stem not sticking out.

INGREDIENTS

½ medium cabbage about 1 ½ pound
½ English cucumber, sliced
1 c. corn frozen and thawed or canned
⅓ c. chopped dill
1 ½ tablespoons vinegar
3 tablespoons olive oil
½ teaspoon salt or to taste
½ teaspoon pepper or to taste

How to make Cabbage Salad with Corn

Step 1: Very thinly slice the cabbage using a mandoline if available.

Step 2: Into a large mixing bowl, place the sliced cabbage and season with salt and pepper. To soften the cabbage and make them release some of the juices massage the cabbage using your hands until moist.

Step 3: To the bowl, add the rest of the ingredients, mix well, and serve. Enjoy!

TO STORE THE SALAD:

Though this cabbage salad is best when consuming fresh, you can also store in the fridge the leftovers for up to 24 hours. Just place the leftovers in an airtight container.
