Chef John’s Peach Pie

Beautifully made and practical as the lattice design lets the moisture evaporate to ensure a delicious, perfect Peach Pie without the horrifying watery-pie syndrome.

Ingredients

3 pounds fresh freestone peaches, peeled and sliced
1 cup white sugar, divided
1 tiny pinch of salt
¼ cup all-purpose flour
1 tablespoon cornstarch
1 teaspoon lemon juice
1 pinch cayenne pepper
1 pinch ground cinnamon
1 pastry for a 10-inch double-crust pie
1 ½ tablespoons butter, cut into tiny pieces
1 tablespoon heavy whipping cream, or to taste
1 tablespoon white sugar, or to taste

How to make Chef John’s Peach Pie

Step 1: Prepare the oven. Preheat it to 350 degrees F or 175 degrees C.

Step 2: In a bowl, mix the peaches, half a cup sugar, and salt. Allow sitting for at least 20 to 30 minutes before straining the juice in a saucepan. Place the strained peaches back into the bowl.

Step 3: Bring the juice to a boil. Once boiling, adjust the heat to medium-high and cook for about 5 to 10 minutes or until the syrup has thickened.

Step 4: In a bowl, add half a cup of sugar, flour, and cornstarch. Whisk until combined.

Step 5: Whisk in the lemon juice, cayenne pepper, and cinnamon. Pour this over the peaches and add the flour mixture. Toss to coat before adding in the syrup. Stir more to coat.

Step 6: In a 10-inch pie plate, roll out half of the pastry. Fit well.

Step 7: Add the crust and pour the peach filling over. Gently tap the pie plate for the filling to settle and add dots of butter on top.

Step 8: Unroll the rest of the crust to make an 11-inch circle. Use a paring knife or pastry wheel to cut it into inch strips.

Step 9: On top of the pie, lay 5 strips and weave the rest through to make a lattice top. Seal by folding the ends of the strips under the bottom crust before crimping.

Step 10: Brush the top with cream and sprinkle with a tbsp sugar.

Step 11: Place inside the preheated oven and bake for about an hour and 15 minutes or until browned and bubbling.

Step 12: Remove from the oven and allow to cool completely.

Step 13: Slice and serve. Enjoy!
