Chicken and Broccoli Cheesy Casserole – Low Carb Recipe

A healthy, comforting, and super simple meal to prepare for the whole family. As a mom, I don’t want to just serve anything, I want a healthy, family-friendly meal on our table. And this Chicken and Broccoli Cheesy Casserole deserve a 5 star because it’s not only delicious but it hits the jackpot for being one of the healthiest and family-friendly meals. My kids are super picky eaters, yet they love this. I always have a hard time convincing them to eat vegetables but they make an exemption for this dish. My kids said and I quote, “we like cheesy, we like chicken, but broccoli, noooo. But this is so good!” This is one of the most requested meals in the house, and I’ve never been so happy looking at my kids eating vegetables.


2 cups of water
2 cups of uncooked instant rice
2 (10 ounces) cans of chunk chicken, drained
1 (10.75 ounces) can of condensed cream of mushroom soup
1 (10.75 ounces) can of condensed cream of chicken soup
¼ cup of butter
1 cup of milk
1 (16 ounces) package frozen chopped broccoli
1 small white onion, chopped
1 pound processed cheese food

How to make Chicken and Broccoli Cheesy Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees F or 175 degrees C.

Step 2: Boil water into a medium saucepan. When the water is boiling, mix in the instant rice, cover, and remove from the heat. Let it sit for 5 minutes.

Step 3: Mix the prepared rice, chicken, cream of mushroom soup, cream of chicken soup, butter, milk, broccoli, onion, and processed cheese in a 9 x 13-inch baking dish.

Step 4: Place the baking dish inside the preheated oven and bake for 30 to 35 minutes, or until the cheese is melted.

Step 5: Halfway through cooking, stir the casserole to make sure that the cheese melts evenly. Remove from the oven and serve hot. Enjoy!
