Chicken and Dumplings Casserole

This casserole has been one of my go-to for lazy and busy nights. Not short in flavour and tastes incredible, I am pretty sure you’ll love the fluffy dumplings with loads of gravy poured over them. A comforting dish that is not only perfect for a family dinner but great for parties or potlucks, too.

Ingredients

1 chicken
1 small diced onion
1 stick butter
2 cups Bisquick
2 cups of milk
1 can(s) cream of chicken soup
1 tablespoon chicken broth paste(or cube)
1 teaspoon poultry seasoning
salt and pepper to taste

How to make Chicken and Dumplings Casserole

Step 1: Cook the whole chicken with diced onion and season with salt and pepper. Debone and cube the chicken, saving the chicken broth.

Step 2: Prepare the oven. Preheat it to 350 degrees.

Step 3: Pour the melted butter into a 9 x 12-inch baking dish, then evenly spread the diced chicken on top. Season with salt and pepper.

Step 4: In a bowl, combine 2 cups Bisquick with poultry seasoning, and milk until well mixed and no lumps remain. Gradually pour this over the chicken and DO NOT stir.

Step 5: In a bowl, whisk 2 cups of warm broth with pasta. You can remove the onions out of the broth with a slotted spoon if desired. Stir well to completely dissolve the paste before stirring in the cream of chicken soup. Mix until lumps are out. Slowly pour this on top of the dish and DO NOT stir.

Step 6: Place inside the preheated oven, uncovered, and bake for about 50 to 60 minutes or until golden brown.

Step 7: Once done, remove from the oven and let the casserole cool for at least 10 to 15 minutes before serving.
