Chicken Fajitas Casserole

This casserole is a staple chicken dinner recipe. Extremely delicious with the right amount of spice. A savoury and cheesy Chicken Fajitas Casserole that is incredibly easy to throw together and ready in less than an hour! And missing this amazing casserole is never an option because everyone is asking for it always!


1 lb cooked boneless, skinless chicken breasts, shredded
1 tbsp olive oil
1 small green bell pepper, sliced into thin strips
1 small red bell pepper, sliced into thin strips
1 small yellow onion, thinly sliced
1/4 tsp salt
8 oz. cream cheese, softened, cut up into pieces for easier mixing
8 oz. shredded cheddar cheese
1 1/2 tbsp fajita seasoning mix
salt and fresh ground pepper, to taste
fresh cilantro or parsley, for garnish

How to make Chicken Fajitas Casserole

Step 1: Prepare the oven. Preheat it to 350 degrees F. and using cooking spray, lightly grease a 9 x 13-inch baking dish and set aside.

Step 2: After shredding the chicken, place it into a large mixing bowl. Set aside.

Step 3: In a skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the pepper strips and onions to the skillet. Season with salt and cook for about 4 to 5 minutes until tender, stirring often. Take the skillet off the heat, then add the chicken to the mixture and set aside.

Step 4: Place the cream cheese, half of the shredded cheese, fajitas seasoning mix, salt, and pepper in a large bowl. Mix well until combined.

Step 5: To the chicken and peppers, add the sour cream mixture, stirring well until incorporated.

Step 6: To the prepared baking dish, pour the chicken mixture and sprinkle with the rest of the shredded cheddar cheese. Place in the preheated oven and bake for about 25 to 30 minutes until hot, bubbly, and the cheese has melted.

Step 7: Take the casserole out of the oven and serve garnished with some chopped cilantro or parsley. Enjoy!
