I cannot believe how delicious this elegant casserole is! Made with onions, carrots, basmati rice, and chicken and ready in less than an hour, this casserole is sure to leave you satisfied but still asking for more!

My mom shared this recipe not a long time ago. She’s confident that I’m going to love this, and she’s never wrong! If you want a simple, filling, and no fussy dinner, this Chicken Rice Casserole is what you need. Serve this with a quick salad, your favourite steamed vegetables, or store-bought/homemade coleslaw, and enjoy this tasty casserole straight from the oven!

INGREDIENTS

1 pound Boneless, skinless chicken thighs
1 c. Basmati rice
3 tablespoons Olive oil
1 Onion medium
2 Carrots medium
2 c. Chicken broth
1 teaspoon Favorite Chicken Seasoning, to taste
1 teaspoon Salt and pepper, to taste, to taste

HOW TO MAKE CHICKEN RICE CASSEROLE

Step 1: Prepare the oven. Preheat it to 450 degrees F.

Step 2: In a large skillet with olive oil, saute the chopped onions for approximately 3 minutes over medium-high heat. Add the carrots and continue to cook for 3 minutes more.

Step 3: To the skillet, add the chicken. Season with salt, pepper, and your preferred chicken seasoning such as (Mrs. Dash Original Seasoning, Taco Seasoning, Old Bay Seasoning, etc. And cook the chicken for about 5 to 7 minutes.

Step 4: To a medium casserole dish, transfer the chicken. Then, add the rice along with the chicken broth. Mix well. Place in the preheated oven and bake for about 40 minutes, covered in foil.

Step 5: Remove from the oven when done and serve right away with a quick salad, your favourite steamed vegetables, or store-bought/homemade coleslaw. Enjoy!

NOTES:

1. For this recipe, you can use your favourite Chicken Seasoning like Mrs Dash Original Seasoning, Taco Seasoning, Old Bay Seasoning, etc.

2. Add more or less salt depending on how salty the chicken broth you are using.
