Chile Rellenos Casserole

Before a few days ago I have never heard of Chile Rellenos Casserole. I had the time to browse the net when I took a couple of days off from working my six days job. I love to cook and eat, but I have never done any decent cooking for some time because of my incredibly busy schedule. When I saw this recipe, I imagined it would be amazing, and I was not wrong! I loved it so much that it automatically became part of my family’s favourite rotation. Delicious, great leftover, and an incredible one-dish meal (equals easy clean-up!).

This Chile Rellenos Casserole is light on the carb but still filling and super easy to throw together! The chile in this dish is mild so if you want more kick, add some red pepper flakes.

Ingredients

1/2 pound ground beef (or ground turkey or chicken)
1/4 onion (chopped)
1 10-ounces can whole green chillies (or 2 roasted fresh green chiles)
1 1/2 c. cheddar cheese
2 Eggs
3/4 c. milk
1/8 c. flour
1 teaspoon cumin
1/2 teaspoon salt
1/2 teaspoon pepper

How to make Chile Rellenos Casserole

Step 1: Prepare the oven. Preheat it to 375 degrees F.

Step 2: After cooking the hamburger meat and onion, drain the excess grease. Add the cumin, salt, and pepper.

Step 3: Using a non-stick cooking spray, lightly grease a pan. And with whole green chiles, line the bottom of the prepared pan.

Step 4: Over the green chiles, layer the meat mixture and top with cheese and chopped green chiles.

Step 5: In a bowl, whisk the eggs and milk. Add the flour and continue to whisk until well mixed. Over the dish, pour the egg mixture. Place in the preheated oven and bake for about 35 to 40 minutes.

Step 6: Remove from the oven when done and serve straight away. Enjoy!
