Company Chicken Casserole

This is a new addition to my chicken and casserole recipes. I saw this recipe days ago and I thought I should give it a try. I am glad I did because it is so good! My daughter loves chicken and I am in love with casserole recipes. So making this dish is a breeze. This Chicken Casserole is a winner! Super delicious, hearty, and satisfying. I could not ask for anything! This has chicken which is a staple in my family, butter, and broccoli. My kind of dinner, a jam-packed dish that even my picky eaters love. And this is super easy and quick to make. Great for my busy schedule. I come home, rest a bit, and cook. That is my every day after work routine. Thank goodness I came across this wonderful dish, it is a great addition to my easy, quick, and complete dinner menu. This chicken casserole makes my life easier. I am sure to make this more often. The kids love it, my husband is amazed by how delicious this simple dish is, and I’m captivated!


4 boneless skinless chicken breasts
1 cup of chicken broth
2 cloves of garlic
2 wedges of onion
4 cups of pepperidge farms herb-seasoned stuffing mix
1 (½ cup) cube of butter, fat-free
1 can cream of chicken soup
1 pint of sour cream, reduced-fat
8 oz of thawed frozen broccoli cuts (optional)

How to make Company Chicken Casserole

Step 1: Place the chicken breasts, broth, garlic, and onion in a skillet. Bring to boil over medium-high heat.

Step 2: Once boiling, adjust the heat to medium and simmer for another 15 to 20 minutes, covered.

Step 3: Remove the chicken from the skillet. And using a fork, shred the chicken, and reserve the broth.

Step 4: In a casserole, melt the butter and mix all the ingredients.

Step 5: Place the casserole inside the oven and bake until golden brown.

Serves: 8
