I haven’t visited Starbucks for a while now. I used to go there every day for my favourite coffee and banana bread. But since the pandemic and I started working at home, I have not gone out to do my usual thing. I super miss their banana bread. It’s one of their best assets. This is a moist and decadent banana loaf. Now, I am craving big time! Thank goodness for this copycat recipe, I can make my favourite banana bread any time and at the comfort of my home! You can omit the walnuts if desired, but I highly suggest don’t as they add so much flavour to this banana bread. If desired, you can substitute the walnuts with chocolate chips, and it’s going to be as amazing!
INGREDIENTS
½ c. vegetable or canola oil
2 c. flour
1 tsp baking soda
1 Egg
1⅛ c. sugar
½ tsp vanilla
2 tbsp buttermilk or milk
¼ tsp salt
½ c. chopped walnuts (optional)
3 bananas mashed very well
HOW TO MAKE COPYCAT STARBUCKS BANANA BREAD
Step 1: Prepare the oven. Preheat it to 325 degrees.
Step 2: To a small bowl, add the flour, baking soda, and salt. Mix well and set aside.
Step 3: Whisk the egg with sugar and oil until well mixed.
Step 4: To the wet ingredients, add the dry ingredients. Mix well until you have a thick and dry mixture. Now, add the milk followed by the vanilla and bananas. Mix well until combined.
Step 5: Fold in the walnuts, then pour everything into a loaf pan.
Step 6: Place the loaf pan in the preheated oven and bake the bread for about 50 to 75 minutes. Make sure to keep an eye on the loaf. The bread is done when a knife inserted in the centre comes out clean.
