CREAMY BURRITO CASSEROLE

This is comfort food that I often crave. I just love burritos and this casserole is like the upgraded kind of burritos that I normally make. This recipe is one to keep, especially if you are like me who loves burrito, cheese, and a good casserole. It’s very tasty, cheesy, and is insanely good! The first time I made it, I immediately fell in love. One bite and I’m hooked! This too is very easy to make, which is great because of my very busy schedule. I’m a spicy kind of girl, so I always drizzle it with some hot sauce on top. Although you can skip this step, it’s all good.

INGREDIENTS

1 lb ground beef or 1 lb ground turkey
1⁄2 medium yellow onion, chopped
1 (1 1/4 ounce) package taco seasoning
6 large flour tortillas
1 (16 ounces) can of refried beans
2 -3 cups of shredded taco cheese or 2 -3 cups cheddar cheese
1 (10 3/4 ounce) can of cream of mushroom soup
4 ounces sour cream
jarred hot sauce, if desired to spice it up

HOW TO MAKE CREAMY BURRITO CASSEROLE

Step 1: In a skillet, brown the ground meat or turkey, and the onion. Once browned, drained any excess fat.

Step 2: Stir in the taco seasoning and add the refried beans.

Step 3: In a separate bowl, combine the soup and sour cream. Mix until combined.

Step 4: Spread only half of the cream mixture into the casserole dish.

Step 5: Then, tear up 3 tortillas and evenly spread them over the sour cream mixture.

Step 6: Pour half of the meat and bean mixture over the tortilla layer.

Step 7: Sprinkle cheese on top.

Step 8: If you want to put some hot sauce, you can drizzle it on top of the cheese.

Step 9: Then, repeat the steps to layer the remaining mixtures.

Step 10: End with cheese on top of the casserole. Place inside the preheated oven and bake at 350 degrees F for about 20 to 30 minutes.
