Creamy Sausage Tortellini with Spinach, Tomatoes and Mozzarella cheese sauce

Whenever I am craving a simple Italian-style dinner, this creamy sausage tortellini is my go-to. This is incredibly easy to throw together using a few readily available ingredients. To make life easier, you can simply buy pre-made tortellini, then smother it into the delicious homemade creamy sauce with spinach, tomatoes, and mozzarella cheese. Pasta dinner made easy with this amazing recipe! Serve this with some crusty bread or a simple side salad for a quick weeknight meal any time.

Ingredients

2 c. cheese tortellini
16 ounces Italian pork sausage or regular, fresh, uncooked (for this I used Jimmy Dean brand)
14 ounces diced tomatoes
⅛ tsp paprika
1 c. half and half
¼ c. Mozzarella cheese shredded
salt to taste
¼ tsp crushed red pepper flakes
2 c. spinach uncooked

How to make Creamy Sausage Tortellini with Spinach, Tomatoes and Mozzarella cheese sauce

Step 1: Cook the sausage in a large skillet over medium heat, breaking the meat into pieces and stirring as it cooks until the sausage is no longer pink. When done, drain the grease from the skillet.

Step 2: To the sausage in the skillet, add the diced tomatoes along with the liquid from the can, red pepper flakes, and paprika. Stir well on a low simmer.

Step 3: Following the package directions cook the tortellini in another pan. When done, drain and add the cooked tortellini to the pan with the sausage and tomatoes.

Step 4: Stir in the uncooked spinach, then add the half-and-half. Bring everything to a gentle boil. Once boiling, decrease the heat to a simmer. Put the lid on and allow the spinach to wilt for a few minutes. Uncover and stir.

Step 5: Allow the mixture to come to a gentle medium bowl, then add 1/4 c. of mozzarella cheese. Mix well until the cheese has melted.

Step 6: Season with salt, more paprika, and extra crushed red pepper flakes. Serve and enjoy!
