Crispy Garlic Roasted Potatoes

If you are looking for an easy and perfect side dish to any meal or appetizer, this is for you – buttery, garlicky, crispy on the outside, and soft in the middle roasted potatoes. A pretty simple dish that goes so well with just about anything! A good starter with bite-sized, well-flavoured potatoes. If you want to learn something new, this savoury, hearty, and filling dish is worth it!

Ingredients

2 1/2 lbs russet potatoes (cut into 1” cubes)
2 1/2 tbsp olive oil or canola oil
1 tsp sea salt
1 tsp smoked paprika
1/4 tsp dried parsley
1/2 tsp freshly ground black pepper
8 cloves garlic (minced)
2 tbsp fresh chopped parsley
2 tbsp grated Parmesan cheese (optional)

How to make Crispy Garlic Roasted Potatoes

Step 1: After peeling the potatoes, slice them and place them in a bowl with cold water for an hour. Discard the water after an hour and replace it with fresh cold water. Let the potatoes submerge in the fresh cold water for an hour more.

Step 2: Prepare the oven. Preheat it to 400 degrees F. And using cooking spray. Lightly grease a baking sheet and set it aside.

Step 3: After an hour, drain the liquid and discard, then arrange the potatoes on a kitchen towel. Put another paper towel over the potatoes and pat them dry.

Step 4: To a large bowl, add the potatoes. Drizzle the potatoes with oil and season with salt, pepper, smoked paprika, dried parsley, and garlic. Toss the coat well before transferring the potatoes on the prepared baking tray. Arrange the potatoes in a single layer with a little space between each slice. Place in the preheated oven and roast the potatoes for about 45 to 60 minutes. Flip them often until crisp and golden.

Step 5: When done, take the potatoes out of the oven and season with more salt and pepper. Before serving, sprinkle with parsley and Parmesan cheese. Enjoy immediately!
