The perfect slow cooker sweet side dish – crockpot sweet potato casserole coated in brown sugar and topped with pecans and marshmallows. The star of Thanksgiving and the favourite among the Christmas menus. A no-fuss, no mess side dish that everyone is raving about. And what not to love about sweet potatoes, right? This I think is the best sweet potato casserole made easy in a crockpot.
Christmas is fast approaching and we are already excited! This year we are planning to have only a simple dinner with the family and serve food that makes us happy.
INGREDIENTS
3-1/2 pounds sweet potatoes, peeled and cut into 1/2-inch pieces
1/2 c brown sugar
2 tbsp butter, melted
1 tbsp pumpkin pie spice
1 tbsp vanilla
1 tbsp water
1 tsp salt
2 c mini marshmallows
whole pecans for serving
HOW TO MAKE CROCKPOT SWEET POTATO CASSEROLE
Step 1: Use nonstick cooking spray to grease a 6-quart slow cooker.
Step 2: Add in the slow cooker the peeled and sliced sweet potatoes.
Step 3: Add the brown sugar, melted butter, pumpkin pie spice, vanilla, water, and salt in a different bowl. Mix well until incorporated and pour this over the potatoes. Stir to evenly coat the potatoes.
Step 4: Cook on high for about 3 1/2 to 4 hours, covered or until the sweet potatoes are soft and tender. Adjusting the heat after to low heat.
Step 5: To serve, sprinkle on top the mini marshmallows and cook for another 3 to 5 minutes, covered until the marshmallows are just melted.
Step 6: And serve with either whole, chopped, or sugar covered pecans on top. Enjoy!
