Crustless Spinach, Onion and Feta Quiche

A wonderful dish that is technically crustless but has a nice crusty bottom and sides. A simple and quick Crustless Spinach, Onion, and Feta Quiche that is huge in flavor. A veggie breakfast menu that will kick start your day! Satisfying, amazingly delicious, not to mention a healthy vegetable-filled dish that will keep you full and satisfied. I always remind my kids that breakfast is the most important meal of the day, thus, a healthy and delicious meal is necessary to start the day.


1 medium onion, diced
6 ounces Fresh Express Baby Spinach
2 large eggs
1/2 cup egg beaters (liquid substitute)
1/2 cup all-purpose flour
1/2 teaspoon baking powder
pinch cayenne pepper
1 1/3 cups non-fat milk
1/2 cup feta cheese

How to make Crustless Spinach, Onion and Feta Quiche

Step 1: Prepare the oven. Preheat it to 400 degrees.

Step 2: Grease lightly a 10-inch quiche/tart pan or pie plate.

Step 3: Cook the diced onion with a little vegetable oil or cooking spray in a medium frying pan over medium-high heat until the onion is translucent and tender.

Step 4: Stir in fresh spinach and continue cooking until just wilted. Once done, set aside and cool for a few minutes.

Step 5: Whisk the eggs, flour, and baking powder in a large mixing bowl.

Step 6: Then, mix in the milk before stirring in the spinach-onion mixture.

Step 7: Pour the quiche base into the greased pan and top with feta cheese.

Step 8: Place inside the preheated oven and bake for about 25 minutes or until the middle is set and the edge is golden brown.

Step 9: Once done, remove from the oven and let it sit for 5 minutes before slicing. Enjoy!
