Dad’s Creamy & Cheesy Au Gratin Potatoes

You will love this incredible side dish. Make this easy Cheesy, creamy au gratin potatoes filled with cheesy goodness for the Holidays or anytime and enjoy every bite!

Ingredients

6-7 medium Yukon gold potatoes, thinly sliced into 1/8″ rounds (3 lbs gold potatoes – by weight is a more accurate measure)
½ white or yellow onion, cut into slices
Sauce:
2 tbsp salted butter
¼ c all-purpose flour (whole wheat, all-purpose, or gluten-free 1:1 flour will all work)
1 1/2 c unsweetened almond milk (regular, skim, or whole milk will also work)
8 oz sharp cheddar cheese (2 heaping c shredded cheddar cheese)
½ tsp garlic powder
¾ tsp salt, plus more to taste
Freshly ground black pepper

Topping:

1/2 c Gruyere cheese (or sub more sharp cheddar)
¼ c grated parmesan

Garnish:

Fresh chopped parsley

How to make Dad’s Creamy & Cheesy Au Gratin Potatoes

Step 1: Prepare the oven. Preheat it to 375 degrees F.

Step 2: Grease a 2-quart square baking dish or an 8 x 12-inch baking pan with nonstick cooking spray or butter or oil.

Step 3: Add the sliced potatoes to the prepared dish in three not too tight slanted rows. Place the onions in between the rows or where you can fit them.

Step 4: To make the sauce, melt 2 tbsp butter over medium heat. Once melted, whisk in a small amount of flour, then gradually add in the milk, alternately with the flour. Whisk vigorously to remove any lumps. Simmer until you reached a creamy gravy consistency.

Step 5: Adjust the heat to low and stir in the shredded cheddar cheese, garlic powder, salt, and pepper. Adjust the salt and pepper according to taste.

Step 6: Evenly pour the sauce on top of the potatoes and onions. Cover with foil and place inside the preheated oven. Bake for about 45 minutes until nice and creamy.

Step 7: Take the foil out and sprinkle over the half cup shredded gruyere or extra cheddar and 1/4 cup Parmesan.

Step 8: Bake for another 30 to 45 minutes or until the potatoes are nice and golden brown.

Step 9: Before serving, garnish with fresh chopped parsley.

Notes:

1. Add 8 oz of chopped bacon if desired. Sprinkle on top of the potatoes before you pour over the cheese sauce. Or stir the chopped bacon into the sauce.

2. You can prepare this 3 days ahead. After you pour the sauce on top of the potatoes, cover with foil, and refrigerate. When ready to serve, add 15 minutes to the baking time.

3. To store, place in individual containers or just cover the pan. Store in the fridge for up to 5 days.

4. When reheating, microwave individual portions or place the entire pan in the oven and bake until heated through.
