My mom was diagnosed with type 2 diabetes and she is on a strict diet ever since. This is the reason why I started to check for sugar-free desserts. My mom loves sweets and it saddened me to know that she’s never gonna eat sweet treats because of her condition. Although, there are a lot of sugar-free desserts out there that she can sometimes have but I want to make sure that all she’s eating is healthy. So I made her a deal. That all she’ll have is what I make. Thus, this diabetic no-bake sugar-free strawberry cheesecake. My mom loves this cake. It is her new favorite dessert. An amazing no-bake cake that is so easy to make. The ingredients are simple and most of them are already available in your pantry. I am hooked with no-bake recipes. No need to turn the oven on, no need for fancy ingredients, all you got to do is mix and chill. At first, you’ll think that this cake is difficult to whip up but try it and I promise you, you’ll be surprised.

Ingredients

3/4 cup graham cracker crumbs
3 tablespoons butter, melted
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 (8 ounces) package cream cheese, softened
1 1/2 cups milk
1 (1 ounce) package cheesecake flavor sugar-free instant pudding mix
2 pints fresh strawberries, sliced

How to make Diabetic No-Bake Sugar Free Strawberry Cheesecake

Step 1: In a bowl, combine the graham cracker crumbs, melted butter, cinnamon, and nutmeg. Mix well.

Step 2: Pour the mixture into an 8-inch pie dish. Press the mixture in the bottom of the dish. Place inside the fridge while preparing the filling.

Step 3: Meanwhile, in a mixing bowl beat the cream cheese using an electric mixer on medium speed until softened. Then, adjust the speed to low and slowly beat in the milk a little at a time. The mixture will be runny. With a rubber spatula, scrape the cream cheese from the sides of the bowl.

Step 4: And beat in the pudding mix until the filling consistency is thick and smooth.

Step 5: Use a spoon to transfer half of the cream cheese filling in the bottom of the graham cracker crust.

Step 6: Then, pour half of the strawberries over the filling and spread.

Step 7: Do the same for the remaining pudding mix and strawberry filling.

Step 8: Place the pie inside the fridge and chill for at least an hour to set and cool.
