A little trivia (which I only learned freshly), Chicken Divan is first served in Divan Parisien Restaurant in the New York City Chatham Hotel in the early twentieth century made by a chef named Lagasi. I know, I did not even know this until recently! Anyway, the real chicken divan is a casserole dish made with chicken, broccoli, and Mornay sauce. And this recipe is an excellent copycat made with the same ingredients but a lot more. It is mouthwatering, perfect for the whole family, with irresistible flavours and amazing textures.
Ingredients
2 cups cooked, cubed chicken breast meat
1-pound fresh broccoli, cooked and chopped
1 cup mayonnaise
1 ½ tbsp curry powder
½ tsp cayenne pepper
½ tsp garlic salt
salt and pepper to taste
2 ½ cups shredded Cheddar cheese, divided
1 (10.75 oz) can condense cream of chicken soup
1 (10.75 oz) can condense cream of mushroom soup
1 (6 oz) can French-fried onions
HOW TO MAKE DIVINELY DIFFERENT CHICKEN DIVAN
Step 1: Prepare the oven. Preheat it to 175 degrees C or 350 degrees F.
Step 2: In a 9 x 13-inch baking dish, add the chicken and top with broccoli.
Step 3: Mix the curry powder, garlic salt, cayenne pepper, mayonnaise, salt, and pepper in a medium mixing bowl until combined. Add in the cream of chicken soup, cream of mushroom soup, and Cheddar cheese and stir until incorporated.
Step 4: Pour this on top of the chicken and broccoli and evenly spread.
Step 5: Sprinkle over the rest of the onions and cheese.
Step 6: Place inside the preheated oven and bake for about 30 minutes or until the cheese has melted.
Step 7: Allow cooling on a wire rack at room temperature. Serve and enjoy!
Notes:
1. Serve this alongside garlic butter bread.
2. Use cream of chicken in place of cream of mushroom soup.
3. Replace mayonnaise with sour cream if desired.
