Easy Mexican Casserole

by Sheryl

Nothing beats a dish with beef in it! Shoutout to my Mexican friends! My best friend’s mom taught me this incredible dish. We used to have this when we were little. Her mom always prepares this whenever we had a sleepover in their house. She was so nice and very talented. One time we had a cooking show in their kitchen where she showed us all the necessary ingredients and steps for this Casserole.  She told us that her mom taught her this recipe and that it was her time to continue the legacy of this dish by teaching her daughter and her best friends. We did learn a lot on that day. I will always treasure that. Good times!

INGREDIENTS

1 pound lean ground beef
1 can Ranch Style beans
1 10-12 ounce bag tortilla chips, crushed
1 can of Ro-tel tomatoes
1 small onion, chopped
2 cups of shredded cheddar cheese, divided
1 package taco seasoning
1 can of cream of chicken soup
1/2 cup of water
Sour cream and salsa for serving

How to make Easy Mexican Casserole

Step 1: Ready the oven and preheat to 325 degrees F.

Step 2: Place a skillet on the stove and turn the heat to medium and add the beef.

Step 3: When fat comes out of the beef, Add in onion, beans, tomatoes, taco seasoning, water, and soup.

Step 4: Turn the heat to medium-low and simmer the beef mixture until all ingredients are well incorporated.

Step 5: Apply cooking spray into a 9×13-inch casserole dish. Place crushed tortilla on the bottom of the casserole dish to make a layer. Add the beef mixture then followed by the cheddar cheese. Repeat this process until all ingredients are in the casserole dish.

Step 6: Bake in the oven for 20 – 30 minutes covered with foil. Bake until smooth and bubbly.

Step 7: Transfer on the wire rack and let it sit for 5 to 10 minutes before serving. Garnish with salsa and sour cream. Enjoy!
