Summer is almost over, and what better way to bid summer goodbye but with these easy and incredibly delicious Mexican Street Corn. The perfect summer side to your favourite meal that you can make with a few simple ingredients. Quickly prep this in five minutes, grill, and these scrumptious street corns are ready in less than twenty minutes! Or forget the hassle of grilling and just roast these in the oven for no more than twenty-five minutes.
4 ears of corn
¼ c. of Crema Mexican Agria Sour Cream (regular sour cream will work as well)
¼ c. of mayonnaise
½ c. of Cotija cheese, crumbled
2 cloves of garlic, crushed (or finely minced)
¼ tsp of fine sea salt
Juice and zest of 1 lime
1/4 c. of Cilantro, finely chopped
½ tsp of chipotle chilli powder
How to make Easy Mexican Street Corn
Step 1: Ready the grill. Roughly heat it to 400 degrees F.
Step 2: Grill the corn either with husks on or off. As for me, I removed the husks to get nice grill marks and grilled flavour on the corn. If grilling with husks on, soak the corn in water for at least 10 minutes before grilling. If you prefer the take the husks off, lightly spray the cobs with cooking spray, then grill for about 12 minutes and turning them 1/4 turn every 3 minutes.
Step 3: In the meantime, whisk the Cacique® Crema Mexican Agria Sour Cream, mayonnaise, cotija cheese, garlic, lime zest and juice, and cilantro to make the topping sauce.
Step 4: With the cheese mixture, generously top the corn cobs, sprinkle with a little chipotle chilli powder, and sprinkle with a little more cotija cheese and cilantro.
Make this in the oven. Start by preheating the oven to 425 degrees. Using cooking spray, lightly spray the husked corn on the cob, then individually wrap it in foil and roast in the preheated oven for about 20 to 25 minutes.
