You cannot resist the rich and creamy flavour of this easy Olive Garden Zuppa Toscana Soup. Quick, simple to throw together, and perfect if you can’t get enough of soup. Comforting in every sip, this soup is one hearty meal to enjoy with family and friends on cold nights. This copycat if not better is extremely delicious and crazy easy to make.
This thick and rich Zuppa Toscana soup is perfect with a nice, crusty baguette or rolls or with a simple side salad.
INGREDIENTS
1 lb spicy Italian ground sausage use mild for kid-friendly
4 tbsp butter
1/2 white onion, diced
1 tbsp minced garlic
6 c chicken broth
2 c water
4/5 yellow potatoes, cut into 1″ pieces
3 tsp salt or to taste
1 tsp black pepper
2 c heavy cream
4 c chopped kale
chopped bacon or bacon bits and grated parmesan cheese for topping optional
HOW TO MAKE EASY OLIVE GARDEN ZUPPA TOSCANA SOUP
Step 1: Saute the sausage in a large pot for about 5 to 6 minutes until browned. Once done, transfer the sausage to a plate with a slotted spoon and set aside.
Step 2: Add the butter in the same pot and saute the onions over medium heat until translucent.
Step 3: Add and saute the garlic for a minute more until aromatic.
Step 4: Pour the chicken broth, water into the pot, add in the potatoes, and season with salt and pepper. Bring this to a boil and cook the potatoes until tender.
Step 5: Add in the kale and heavy cream. Stir until incorporated.
Step 6: Then, the sausage.
Step 7: Add salt and pepper according to taste.
Step 8: Once done, garnish with grated parmesan if desired before serving. Enjoy!
