Made with simple ingredients and canned salmon these easy salmon patties are a real keeper. Pan-fry or bake and serve warm.
You’ll be surprised that canned salmon is as nutritious as the fresh salmon and it is an easy, cheap, and healthy option. But if you prefer fresh salmon you will need either one 15 ounces can or about 1 pound of fresh salmon for this recipe.
INGREDIENTS
15 ounces canned salmon large bones removed
2 Eggs
1/3 c shredded Parmesan cheese
1/2 c breadcrumbs
1 small bell pepper finely diced
2 tablespoons mayonnaise
2 tablespoons Dijon mustard
2 tablespoons chopped scallion
salt to taste
olive oil or vegetable oil for frying
How to make Easy Salmon Patties
Step 1: In a medium mixing bowl, add the salmon and gently flake using a fork.
Step 2: Add in the remaining ingredients and mix well.
Step 3: Use your hands to make small patties if using a half cup as a measure.
Step 4: If frying the patties, heat oil in a large skillet over medium heat. Note: Add enough oil to cover the bottom of the skillet. Fry for about 5 minutes on both sides or until the patties are crispy and cooked through.
Step 5: If baking, drizzle enough oil onto a large, non-stick cookie sheet. Ensure that the surface is covered evenly. Place the patties on the prepared sheet and lightly brush the tops with oil. Place inside the oven and bake for about 15 minutes at 425 degrees F. Flip the patties and bake for 5 to 7 minutes more.
NOTE:
If using a half-cup measure you’ll be able to make 6 small patties.
