Greek Chicken Gyros with Tzaziki

These Greek Chicken Gyros with Tzaziki are insanely delicious! Marinated chicken, salad, and Tzatziki, everything is just perfect to make such a delicious treat! Try this recipe now. You will not be disappointed at all. Enjoy!

Ingredients:

2 pounds / 1 kg chicken thigh fillets, boneless skinless

MARINADE:

1 tablespoon extra virgin olive oil
1 teaspoon salt
3 tablespoons Greek yogurt, preferably full fat
Black pepper
1 tablespoon white wine vinegar (or red wine or apple cider vinegar)
3 large garlic cloves, minced (~ 3 teaspoons)
1 1/2 tablespoons dried oregano
3 tablespoons lemon juice

TZATZIKI:

1 tablespoon extra virgin olive oil (or more if you want richer)
1 garlic clove, minced
1 1/4 c Greek yogurt, preferably full fat
1/4 teaspoon salt
1 tablespoon lemon juice
Black pepper
2 cucumbers (to make about 1/2–3/4 c grated cucumber after squeezing out the juice)

SALAD:

1/2 red Spanish onion, peeled and finely chopped
3 tomatoes, deseeded and diced
Salt and pepper
3 cucumbers, diced
1/4 c fresh parsley leaves (optional)

TO SERVE:

4 to 6 pita bread or flatbread

Directions:

In a large resealable bag, add all the ingredients for the marinade. Seal the bag and shake it to mix everything.

Put the chicken thighs inside the bag, then massage them until coated with the marinade. Place the bag in the fridge and let the chicken thighs marinate for 3 hours to one whole day.

For the Tzatziki:

Slice into two lengthwise parts the cucumber, then remove the seeds.

Use a box grater to grate the cucumber, then cover it with paper towels and squeeze to discard any water. Transfer it to a mixing bowl.

Add the rest of the ingredients into the bowl with the grated cucumber, then stir everything until well incorporated. Let the mixture rest for 20 minutes to incorporate all the flavors.

For the Salad:

In a mixing bowl, add all the ingredients for the salad. Stir everything until well incorporated.

To Cook the Chicken:

Preheat the grill to medium-high and brush it with oil.

Remove the chicken from the fridge and the bag. Put them over the preheated grill and cook each side for about 3 minutes or until done. Move them to a clean serving plate and cover them with foil to keep them warm.

To Assemble:

Slice the chicken thighs if they are big.

Lay pita bread onto parchment paper, then add a spoonful of salad in the center followed by the chicken and Tzatziki. Roll it up and secure it by twisting the end of the parchment paper. Repeat the process with the rest of the ingredients.

Serve and enjoy!

Notes:

The cooked chicken can last up to 4 days in the refrigerator. Just make sure to store them in an airtight container.
