I love on-the-go breakfast, particularly on busy mornings. Being a full-time working mom is not as easy as everyone imagines. It’s double the work but super fulfilling! Moms like me have a stash of our favourites and go-to recipes for every occasion. One of my top picks is this Ham and Cheese Egg Muffins. Incredibly easy to throw together, requires just a few simple ingredients, and is ready in a snap! And these muffins also freeze beautifully!

For breakfast, we opt for on-the-go and easy breakfast ideas. That’s why I love this ham and cheese egg muffins recipe. These jump-start our morning without the hassle, and it keeps the kids full through the day.
Ingredients
8 oz. ham steak cubed
2 green onions sliced thin
1/2 c. milk (I used skim)
3/4 c. shredded cheddar cheese divided
1/4 tsp garlic powder
12 large eggs
1/2 tsp salt
1/4 tsp black pepper
How to make Ham and Cheese Egg Muffins
Step 1: Prepare the oven. Preheat it to 350 degrees.
Step 2: Using cooking spray, generously grease a muffin tin. You can also use a silicone muffin tin. Set aside.
Step 3: Place the eggs, milk, and spices in a large bowl. Mix well until everything is incorporated. Then, add half a cup of shredded cheddar cheese, ham, and green onions. Stir until mixed.
Step 4: Pour the mixture over each muffin compartment, then with the rest of the 1/4 cup cheese.
Step 5: Place in the preheated oven and bake for about 25 to 30 minutes or until the eggs are pulling sway from the side of the muffin tin and the middle is set.
