2 -3 tablespoons chopped onions
1 lb ground beef ( really lean is preferable)
salt and pepper
Cheese sauce (the same one I use for macaroni and cheese)

3 tablespoons butter
3 tablespoons flour
1/2 teaspoon salt
1/2 teaspoon pepper
8 ounces shredded sharp cheddar cheese
ketchup ( optional condiment)
How to make Hamburger Potato Cheese Casserole
Step 1: For this dish, use a 2 1/2 quart covered casserole. You have to use a great non-stick baking dish or else the dish will stick.
Step 2: Prepare the oven. Preheat it to 350 degrees.
Step 3: Now, brown the hamburger and onion. Then, place a layer of sliced potatoes inside the prepared casserole dish and top it with half of the hamburger and onion mixture. Season with salt and pepper to taste. Adjust depending on how salty your cheese sauce is.
Step 4: Do the same step to layer the remaining potato slices and hamburger mixture. You can again season with salt and pepper if desired.
Step 5: To make the cheese sauce. In a saucepan, melt 3 tablespoons of butter over medium-high heat. Stir in 3 tablespoons of flour and season with salt and pepper. Stirring quickly to blend the ingredients. Pour 2 cups of milk and use a whisk to stir until incorporated. Then, adjust the heat to low and stir until the mixture is thickened and bubbly.
Step 6: Once done, remove the saucepan from the heat and add in the shredded cheddar. Make sure to stir well until the cheese is melted.
Step 7: Carefully, pour the cheese sauce over the hamburger and potatoes. Shoving the potatoes around to let the cheese sauce pass through the crevices and make sure that everything is coated with sauce.
Step 8: Cover the dish and place it inside the preheated oven. bake for about 1 1/2 hours until the potatoes are tender and the top is browned. You can remove the lid of the dish for 20 minutes or so if you want to brown the top a bit.
Step 9: Even if you are using the leanest ground beef, this dish can still be a little greasy. Just spoon the extra grease and you’ll be left with just cheese. This dish is great as is but you can put a generous amount of ketchup if you’d like. Enjoy!
