This easy to make Sandies are better than storebought shortbread cookies. Rich, buttery, filled with pecans, and much more delicious than any pecan cookies out there. This homemade goodness is perfect for snacking or as a gift. My daughter always bring some to school. She said her friends love them as much as she does. These Pecan Sandies are her favorite school snack and after school snack. Well, what can I say she’s crazy about this made from scratch cookies.

I am no baker, but last summer I tried to do some baking, and from then on whenever I have time I bake. But I make an exemption since these Sandies are super easy to whip up and my daughter loves them, I bake them almost every day!

INGREDIENTS

2 sticks butter, unsalted (1/2 lb., softened)
1 cup vegetable oil
1 cup sugar, granulated
1 cup confectioner’s sugar (sifted)
2 eggs (large)
1 teaspoon vanilla extract
4 cups flour, all-purpose (500 gr.)
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon salt
2 cups pecans (chopped)
1/2 cup sugar, granulated (for decoration)

HOW TO MAKE HOMEMADE PECAN SANDIES

Step 1: Prepare the oven. Preheat it to 325 degrees F.

Step 2: Cream the butter, vegetable oil, a cup of white sugar, and confectioners’ sugar in a large bowl until smooth.

Step 3: Then, beat in the eggs one at a time.

Step 4: And stir in the vanilla.

Step 5: In another bowl, combine the flour, baking soda, cream of tartar, and salt until well mixed.

Step 6: Mix the flour mixture into the creamed mixture and stir in the pecans.

Step 7: Now, roll the dough into an inch balls and roll them into the remaining white sugar.

Step 8: Transfer the cookies onto ungreased cookie sheets 2-inches apart.

Step 9: Place the sheets into the preheated oven and bake for about 10 to 12 minutes or until the edges are golden.

Step 10: Once done, remove the cookies sheets from the oven and let them cool on wire racks.
