Homemade Perfect italian cream cake

A spectacular cake that is perfect for all occasions! Moist, tender coconut cake made with a few simple ingredients that will turn any event into something extraordinary. 1 box white cake mix with pudding
3 large Eggs
1/4 c oil
1 tsp vanilla extract
1 1/4 c buttermilk
3 1/2 oz shredded coconut (about 1 1/2 cup)
2/3 c chopped pecans, toasted


16 oz cream cheese, room temperature
1 c butter, room temperature
32 oz confectioners’ sugar
2 1/2 tsp vanilla extract

How to make Homemade Perfect Italian Cream Cake

Step 1: Ready the oven. Preheat it to 350 degrees F or 175 degrees C.

Step 2: Grease three 9-inch pans with cooking spray and evenly flour each pan.

Step 3: Add the cake mix, eggs, oil, buttermilk, and vanilla in a medium mixing bowl. Mix with an electric mixer for 2 minutes.

Step 4: Fold in the pecans and coconut.

Step 5: Transfer and evenly spread the batter into the prepared pans.

Step 6: Bake in the preheated oven for about 15 to 17 minutes or until a toothpick inserted in the centre of the cake comes out clean.

Step 7: Once done, remove from the oven and onto wire racks. Allow the cakes to cool at room temperature for at least 10 minutes.

Step 8: To make the frosting, combine the butter and cream cheese in a medium mixing bowl.

Step 9: Gradually add in the confectioners’ sugar, beating every after each addition.

Step 10: Stir in the vanilla until well blended.

Step 11: Frost the entire cake.
