Keto Baked Crack Chicken Recipe (Ranch Chicken)

Surely, you will never let a week pass by without this Crack Chicken aka Ranch Chicken. The addictive flavour of the ranch, cream cheese, and bacon combined is insanely delicious. And the best part is this recipe is low carb and keto-friendly!

Ingredients

1 tbsp vegetable oil
1 tbsp butter
4 boneless, skinless chicken breasts pounded to 1/4” thickness
salt and pepper to taste to taste
1/2 tsp smoked paprika
4 oz. cream cheese softened
1 tbsp Ranch Seasoning mix
4 oz. shredded cheddar cheese white or yellow
4 slices bacon thick cut, diced

How to make Keto Baked Crack Chicken Recipe (Ranch Chicken)

Step 1: Prepare the oven. Preheat it to 400 degrees F.

Step 2: Combine the cream cheese and a tbsp Ranch Seasoning mixture in a small bowl and set aside.

Step 3: Using cooking spray, lightly spray a 9 x 13-inch baking dish. Set aside.

Step 4: Add the diced bacon to a large skillet and cook over medium-high heat until crispy. Take the bacon from the skillet and set it aside. Make sure to not discard the bacon grease as you need this to brown the chicken breast.

Step 5: Place the skillet back to the heat. Add the vegetable oil and butter to the bacon grease in the skillet. Meanwhile, pound the chicken breasts to about 1/4-inch thick and season with salt, pepper, and paprika. To the hot oil, add 2 to 3 chicken breasts and cook for about 2 to 3 minutes until golden brown. Flip the chicken over and continue to cook the other side for 2 to 3 minutes more.

Step 6: To the prepared baking dish, arrange the chicken breasts and top each with around 2 tbsp cream cheese mixture, spreading evenly to coat the chicken breasts. On top, sprinkle half of the diced bacon, then sprinkle with shredded cheese.

Step 7: Place in the preheated oven and bake for about 15 minutes, covered, until the chicken is cooked through and the cheese has melted and turned light brown. Take the dish out of the oven and serve immediately garnished with the rest of the bacon and sliced scallions. Enjoy!

Note:

For this recipe, you can have the bacon ready ahead of time. In the oven or large skillet, cook the bacon strips until crispy. Transfer them on paper towels to drain. Once the bacon strips are cool enough to handle, dice them, then place them in the fridge until ready to use.
