This comforting, hearty, flavorful, and delicious creamy Red Lentil Dahl is perfect for a weeknight dinner especially during busy days because this takes only 30 minutes to make!
Ingredients
1 1/2 c (300 grams) dry red lentils
1 large (200 grams) carrot finely diced (*see recipe notes)
1 small bell pepper
1 large onion chopped
4 cloves of garlic minced
1 heaped tablespoon fresh ginger minced
1/2 tablespoon vegetable oil
3 c (720 ml) vegetable broth or water
1 c (240 ml) canned coconut milk (*see recipe notes)
1 1/2 teaspoons ground cumin
1 tablespoon curry powder
1/2 tablespoon sweetener of choice
1 teaspoon ground turmeric
1 teaspoon paprika
Sea salt and black pepper to taste
1/3 teaspoon red pepper flakes optional
How to make Masoor Dal Tadka (Red Lentil Dahl)
Step 1: Rinse under running water the lentils. And chop the onion, garlic, ginger, bell pepper, and carrot.
Step 2: In a pot, heat oil and add the onion. Saute for about 3 to 4 minutes over medium heat. Then, add in the ginger, garlic, carrot, and bell pepper.
Step 3: Add the all spices into the pot, then the lentils and 3 cups of vegetable broth or water. Bring the mixture to a boil and allow to simmer for about 10 minutes.
Step 4: Pour in the coconut milk and continue to cook for 5 minutes or until your desired thickness.
Step 5: Season the dahl with black pepper and salt. Adjust the seasoning according to taste.
Step 6: Garnish with fresh herbs and serve warm with basmati rice, potatoes, or naan (flatbread).
Notes:
1. In place of carrots, you can use either sweet potato or pumpkin.
2. If possible, use plant-based creams such as soy cream, oat cream, and others instead of canned coconut milk. Or for a low-fat, low-calorie variant, use plant-based milk like almond, cashew milk, etc.
