Melt in your Mouth Strawberry Buttermilk Pound Cake

INGREDIENTS

1/2 cup shortening
1/2 cup butter
2 cups granulated sugar
3-ounce package strawberry gelatin I used Jello brand
5 large eggs at room temperature
1 cup buttermilk (whole milk can be used) at room temperature
3 cups all-purpose flour
1/2 teaspoon salt
2 and 1/2 teaspoon baking powder
1 tablespoon vanilla extract

How to make Melt in your Mouth Strawberry Buttermilk Pound Cake

Step 1: Ready the oven and preheat to 325 degrees.

Step 2: In a medium mixing bowl, add baking powder, flour, and salt. Whisk until well-mixed.

Step 3: Flour or sugar a 10-inch bundt pan with solid vegetable shortening.

Step 4: Add shortening and butter in the stand mixer bowl. Mix until creamy then add in sugar and continue to mix until the texture becomes fluffy.

Step 5: Add in the eggs one at a time and mix until creamy. Add in vanilla and mix again until blended.

Step 6: Add in the strawberry gelatin into the flour mixture and whisk until well-combined.

Step 7: Add in buttermilk and flour alternately into the flour mixture. (Note: 1/2 buttermilk, 1/3 flour mixture, 1/2 buttermilk, 1/3 flour.)

Step 8: Transfer the batter into the prepared bundt pan and use a spatula to flatten the top part.

Step 9: Place the pan inside the preheated oven and bake for 65v to 70 minutes or until set.

Step 10: Remove from the oven and place it on a wire rack to cool for 10 to 15 minutes.

Step 11: Gently transfer the cake into a serving tray.

Step 12: Serve and enjoy!
