This dish is probably one of the best food I have ever cooked. I’ve known Mexican Manicotti for a long time. It was my favorite when I was in college that is probably why I have mastered the taste of it. Today, I decided to make my take of it. I did not realize how easy it was to make such a delicious meal. I have listed all the steps that you need to follow. Do not skip a step and I promise you that it’s gonna be perfect! Enjoy!
INGREDIENTS
1 lb lean ground beef
2 cups Mexican blend shredded cheese
1 can(s) refried black beans (bush’s)
1 pkg taco seasoning mix
1 jar(s) 16 oz. Picante sauce
2 cups sour cream
2 green onions, sliced
1 small can(s) sliced black olives
2 cups water, warm
1 box manicotti shells
How to make Mexican Manicotti My Way
Step 1: In a medium mixing bowl, add the ground beef, taco seasoning, 1 can of refried black beans, and 1 cup of cheese. Stir until well-mixed.
Step 2: Apply cooking spray in a large baking dish.
Step 3: Spoon the mixture and fill each of the uncooked manicotti shells.
Step 4: Pour 1 jar of Picante on top of the filled manicotti shells.
Step 5: Add in the 2 cups of warm water.
Step 6: Place the shells into the greased baking dish.
Step 7: Cover the baking dish with aluminum foil.
Step 8: Place the baking dish inside the preheated oven and bake for 1 to 1 1/2 hours at 350 degrees C or until the top is bubbly.
Step 9: Remove the baking dish from the oven and pour the sour cream on top together with the olives and remaining cheese.
Step 10: Put the baking dish back to the oven and bake for another 5 to 10 minutes or until the cheese has melted completely.
Step 11: Remove the dish from the oven and let sit on a wire rack.
Step 12: Sprinkle green onions on top. Serve and enjoy!
