MEXICAN PICADILLO

We had an all-Mexican dinner for a week last month, and it was a blast! We’re planning to repeat that this month, and we will be having a new addition to your favourite list. This Mexican Picadillo is not only super easy and quick to make but incredibly delicious! For a complete, filling meal, serve this with some rice and fresh flour tortillas.

INGREDIENTS

1 pound ground beef
½ c. onion, diced
1 green bell pepper, diced
2 c. potato, peeled and diced
4 cloves garlic, minced
8 oz. tomato sauce
1½ c. beef broth
1 teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon ground coriander
1 bay leaf

HOW TO MAKE MEXICAN PICADILLO

Step 1: Add the ground beef in a large heated skillet and cook over medium heat until mostly brown, breaking the meat as it cooks. Drain the excess grease when done and return the beef to the skillet.

Step 2: To the skillet, add the diced onion, green bell pepper, and potatoes. Cook further over medium heat until the onion and peppers have softened. Add the garlic and continue to cook for 30 seconds more.

Step 3: Add the tomato sauce to the skillet followed by the beef broth, salt, pepper, cumin, and coriander. Mix well before adding the bay leaf. Let the mixture simmer, put on the lid, and cook for about 10 minutes.

Step 4: Uncover and stir. Cook further until the potatoes are soft and most of the liquid is gone. This takes another 10 minutes.

NOTES:

1. Feel free to add more veggies such as peas, carrots, etc. Add them at the same time as the tomato sauce and beef broth and allow to simmer until soft and the flavour has been absorbed.

2. In place of tomato sauce, you can use fresh Roma tomatoes. You can finely dice the tomatoes, then saute with the potatoes, onion, and pepper. Or blend, then add with the beef broth.

3. For this recipe, you can use either russet or gold potatoes.
