This has to be one of the best Zucchini recipes I have ever eaten! I made this amazing meal last week when my sister visited me. We were both craving for this since the first time we tasted it at a friend’s wedding. It was so delicious that we asked the caterer for the recipe but she wouldn’t tell us so we made our take to it. I must say, it is much better than the one we had a few weeks ago. I don’t mean to brag but it is. Anyway, you can add chopped bacon to this recipe. We tried it once and boy, was it amazing! This is just a default recipe I guess. I did not include the bacon here because some may not like it. For a healthier take, you can follow all these ingredients but for a not-so-healthy take, I highly recommend the bacon! Give this one a try today and I am 100 percent sure that you are gonna love it. INGREDIENTS
4 large zucchini or summer squash
2 teaspoons garlic powder
1/3 cup parmesan cheese, freshly grated
2 tablespoons olive oil
Kosher salt and freshly ground black pepper, to taste
How to make Oven Roasted Parmesan Zucchini
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Cut the squash into 1/4-inch rounds and place into a large bowl. Add in the olive oil, garlic powder, salt, and pepper. Toss the squash to coat.
Step 3: On a rimmed baking sheet, layer the squash and evenly sprinkle over the parmesan cheese.
Step 4: Place inside the preheated oven and bake for about 9 to 10 minutes or until just tender.
Step 5: then, turn the broiler on high and broil the squash for 2 to 3 minutes until golden brown.
Step 6: Serve and enjoy!
