4 tablespoons Butter
2 tablespoons Olive Oil
2 pounds Boneless Skinless Chicken Breast
1 teaspoon minced Garlic
1 tablespoon Water
2 c. Shredded Parmesan Cheese
1/2 teaspoon salt
1/2 teaspoon Black Pepper
How to make Parmesan Crusted Chicken
Step 1: In half, cut each breast and pound to about half-inch thickness.
Step 2: In a shallow bowl, beat the egg and water until incorporated. Now, add the garlic and season with salt and pepper. Mix well until blended.
Step 3: In a different shallow bowl, place the Parmesan.
Step 4: In the egg mixture, dip each piece of chicken, coating all sides. Let the excess egg drip off, then place the chicken in the Parmesan. On top of the chicken, sprinkle more Parmesan, pressing the chicken gently and coating all sides. Shake the excess off and do the same with the rest of the chicken.
Step 5: In a large skillet, heat the oil and butter over high heat. Once the oil is hot and the butter has melted, add the chicken to the skillet and cook for about 3 minutes, undisturbed, until the edges of the chicken are brown.
Step 6: Using a spatula, lightly press the chicken and flip. Continue to cook the other side, undisturbed, until brown.
Step 7: To a serving plate, transfer the cooked Parmesan-crusted chicken.
