My favourite weekend meal brunch – Peach Baked Oatmeal. Easy to throw together and perfect for meal prep. Delicious and always a huge hit!
INGREDIENTS
2 c old fashioned rolled oats
2 1/2 c unsweetened almond milk
1 tsp cinnamon
1 tsp vanilla
1/2 tsp almond extract
2 c ripe peaches, divided (1 c chopped and 1 c sliced)*
1/4 c maple syrup
2 tbsp melted coconut oil or butter (optional)
pinch of sea salt
How to make Peach Baked Oatmeal
Step 1: Prepare the oven. Preheat it to 375 degrees F.
Step 2: Portion out a cup of chopped peaches and a cup of sliced peaches.
Step 3: Grease with a non-stick spray a square baking dish.
Step 4: In a large bowl, add oats, almond milk, cinnamon, vanilla, almond extract, a cup of chopped peaches, maple syrup, coconut oil, and sea salt.
Step 5: Transfer the mixture into the prepared baking dish and top with the rest of the peach slices.
Step 6: Place inside the preheated oven. Bake for about 45 to 50 minutes.
Step 7: Once done, take the baked oatmeal out of the oven. Allow cooling for at least 5 minutes.
Step 8: Serve a portion in a bowl and top with almond milk.
Step 9: For leftovers, store in an airtight container and place in the fridge for up to 4 days.
Step 10: When ready to serve, cover the whole dish with foil and reheat for about 20 minutes at 350 degrees F oven. Or for 5 to 10 minutes at 350 degrees F oven/toaster oven for individual portions or a minute in the microwave.
NOTES:
1. For this recipe, you can use fresh or defrosted peaches.
2. Adjust how much maple syrup you use according to taste.
