Ingredients:
1 tsp dried parsley
½ tsp dried dill
½ tsp dried thyme
4 slices thick-cut bacon (chopped)
2 carrots (chopped)
½ medium onion (diced)
1 ½ c milk
shredded cheese and green onions for topping as desired
¼ c melted butter
3 c low-sodium chicken broth
2 ribs celery (chopped)
¼ tsp black pepper
2 lbs. russet or gold potatoes (peeled and chopped) 900g
1 c shredded cheddar cheese
3 tbsp all-purpose flour
1 ½ tsp salt
1 tsp minced garlic
Directions:
Place a large soup pot on the stove and turn the heat to high. Add the bacon, then cook for a few minutes until crispy. Move them to a clean plate lined with paper towels to drain any grease.
In the same pot with the bacon grease, add the celery, carrots, and onions. Saute for 5 minutes or until soft.
Add the thyme, garlic, dill, salt, and pepper. Saute for about a minute or until aromatic.
Stir in the potatoes and chicken broth, then deglaze the pot by scraping the bottom. Reduce the heat to medium-high and allow it to simmer.
Turn the heat to medium-low, then cover the pot with the lid and cook the potatoes for 10 minutes or until tender.
In a mixing bowl, add the melted butter and flour. Whisk until well incorporated.
Add the milk and whisk until well blended. Place it in the microwave and heat until the texture becomes thick. Make sure to stir every 45 seconds until you achieve the best texture.
Add the cheddar cheese and milk mixture into the pot, then stir until well blended. Remove from the heat.
Scatter the crumbled bacon on top followed by chopped green onions and more cheese.
