The glory of both worlds and a real treat for the citrus lovers. Fresh slices of lemon and orange nestled the chicken pieces and drizzled in a citrus vinaigrette for an even more flavour that no one can ever say no to! Why choose between orange or lemon chicken with this lovely recipe if you can have both on one plate! Add some fresh herbs, even paprika or red pepper flakes, and you’ll have this on your dinner table in no time!
Ingredients
3 to 4 pounds bone-in chicken parts
2 oranges, sliced
1 lemon, sliced
1 onion, diced
1 c fresh orange juice
1/2 c fresh lemon juice
1/4 c olive oil
4 cloves garlic, minced
1/2 tablespoon dried oregano
1/2 teaspoon paprika
1/4 teaspoon red pepper flakes (optional)
2 to 3 fresh thyme sprigs
2 to 3 fresh rosemary sprigs
Sea salt and freshly ground black pepper
How to make Roasted Citrus And Herb Chicken
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Add the olive oil, garlic, orange juice, lemon juice, dried oregano, paprika, diced onion, red pepper flakes in a bowl and season with salt and pepper. Mix well.
Step 3: At the bottom of a baking dish, add half of the slices of orange and lemon.
Step 4: On top, arrange the pieces of chicken and season to taste.
Step 5: Add thyme, rosemary, and the rest of the orange and lemon slices on top.
Step 6: Drizzle over the entire chicken with the orange-lemon juice mixture.
Step 7: Put the dish in the preheated oven and bake for about 45 to 60 minutes, uncovered.
