Baked until perfectly golden, chicken breasts seared and coated in a garlic and herb sauce. My go-to for easy dinner meal that’s perfect for the whole family!
INGREDIENTS
1 1/4 lbs boneless skinless chicken breasts
1 tbsp olive oil
salt and pepper to taste
2 tsp fresh rosemary leaves minced
3 tbsp butter melted
1 1/4 tsp minced garlic
1/4 c chicken broth
2 tbsp lemon juice
1 tbsp chopped fresh parsley
lemon slices and rosemary sprigs for serving optional
cooking spray
How to make Rosemary Chicken
Step 1: Prepare the oven. Preheat it to 400 degrees F.
Step 2: Season each side of chicken breasts with salt and pepper.
Step 3: In a large pan, heat olive oil over medium-high heat. Once the oil is hot, add the chicken breasts and cook on each side for about 3 to 5 minutes until browned.
Step 4: Into a baking dish greased with cooking spray, transfer the cooked chicken.
Step 5: Combine the rosemary, butter, garlic, chicken broth, and lemon juice in a small bowl. Pour this over the chicken.
Step 6: Place inside the preheated oven. Bake for about 25 minutes or until the chicken is cooked through. Baking time varies depending on the size of the chicken breasts. The chicken is completely cooked when a meat thermometer reached at least 165 degrees F.
Step 7: Spoon the sauce on top of the chicken and sprinkle with parsley. If desired, garnish with lemon slices and rosemary sprigs. Serve and enjoy!
