Impressive lamb dish for entertaining guests – juicy, tender, and perfectly cooked to medium-rare, this incredible dish is perfect for an elegant celebration dinner!
Ingredients
1 rack of lamb (typically 8 to 9 ribs)
1/4 cup olive oil
2 tablespoons fresh rosemary
2 teaspoons fresh thyme leaves
6-8 garlic cloves
Zest of 1 lemon
Coarse salt & freshly ground black pepper, to taste
HOW TO MAKE ROSEMARY & GARLIC OVEN ROASTED RACK OF LAMB
Step 1: Place the lamb with rack removed from the fridge in a baking dish.
Step 2: Rub salt and pepper all over the lamb.
Step 3: Add rosemary, olive oil, garlic cloves, thyme, and lemon zest in a food processor. Pulse for a few times until chopped finely.
Step 4: Marinade the lamb with the mixture by rubbing it all over. Place the lamb at room temperature for about an hour.
Step 5: Prepare the oven and preheat to 450 degrees F.
Step 6: Put the lamb inside the preheated oven and roast for about 15 minutes with the fat part side up. Rotate the baking sheet, then roast for 10 more minutes.
Step 7: Remove from the oven and place it on a cutting board. Let it rest for about 10 minutes before slicing.
Step 8: With a sharp knife, slice the lamb between the bones.
Step 9: Serve immediately. Enjoy!
Notes:
1. You can marinate the lamb in a Ziploc bag, then put it inside the fridge for 1 day. Remove from the fridge, then allow the lamb to rest at room temperature for 1 hour before roasting.
2. Make sure to check the temperature of the oven to get the best result.
3. Check the doneness of the lamb to your preference.
