You don’t have to spend so much time in the kitchen with this deliciously easy slow cooker cabbage rolls. You just need to prepare the rolls and put them into the slow cooker and leave it to cook. This recipe is one of my favorites, my go-to, especially on busy days. You will not be disappointed because these cabbage rolls are amazing! They are insanely good, a no-fuss dish with so much flavor.
1 large head cabbage
1 can (8 ounces) tomato sauce
3/4 cup quick-cooking rice
1/2 cup chopped green pepper
1/2 cup crushed saltines (about 15 crackers)
1 egg, lightly beaten
1-ounce onion soup mix
1 – 1/2 pounds lean ground beef (90% lean)
1 can (46 ounces) V8 juice
Salt to taste
Grated Parmesan cheese, optional
HOW TO MAKE IT SLOW COOKER CABBAGE ROLLS
Step 1: To prepare the cabbage, cook it in boiling water until the leaves fall off. Reserve 12 large leaves for rolls and drain well. Put the rest of the cabbage in the fridge for later use.
Step 2: Slice off the thick vein from the bottom of each leaves to make a V-shaped cut. Set aside.
Step 3: Combine the tomato sauce, green pepper, cracker crumbs, egg, and soup mix in a large bowl.
Step 4: Then, crumble the beef over the mixture and mix thoroughly.
Step 5: On each cabbage leaf, scoop about 1/3 cup of the meat mixture. Then, overlap the cut ends of the leaf. Fold in the sides of the leaf starting from the cut end and completely enclose the filling by rolling up the cabbage leaf. You can use a toothpick to secure the filling if desired.
Step 6: Layer the cabbage rolls in a 3-quart slow cooker. Pour the V8 juice over and cover the slow cooker.
Step 7: Cook on low setting for 6 to 7 hours or until the filling reaches 160 degrees.
Step 8: When ready to serve, sprinkle with some salt and cheese if desired. Enjoy!
