Slow Cooker Chicken with Sweet Potatoes and Broccoli

This is the perfect full-packed weeknight meal with protein and nutrients! A refreshing slow cooker meal with moist and perfectly seasoned chicken with veggies.


1 1/2 tablespoon olive oil
6 large bone-in, skin-on chicken thighs, trimmed
1/4 c. chicken broth
2 1/2 pounds sweet potatoes, peeled and diced into 1 1/4” cubes
4 cloves garlic, minced (1 1/2 tablespoons)
Salt and freshly ground black pepper
1 teaspoon onion powder
2 teaspoons packed light brown sugar
2 teaspoons paprika
1 teaspoon dried thyme, or 1 tablespoon fresh minced
3/4 teaspoon dried rosemary or 2 1/2 teaspoons minced fresh
1/4 teaspoon cayenne pepper (more or less to taste for desired heat level)
1 (16 ounces) pkg. frozen broccoli florets
Fresh parsley, chopped (for garnish, optional)

How to make Slow Cooker Chicken with Sweet Potatoes and Broccoli

Step 1: Using nonstick cooking spray, grease a 6-quart slow cooker. In an even layer, place the sweet potatoes in the slow cooker, then pour over the chicken broth and sprinkle with half of the garlic. To taste, season with salt and pepper.

Step 2: Place the paprika, brown sugar, onion powder, thyme, rosemary, and cayenne pepper in a small mixing bowl. Whisk until combined. Over the potatoes, evenly sprinkle half of the spice mixture. Keep the rest of the spice mixture aside.

Step 3: In a large pot, heat the olive oil over medium-high heat. Using paper towels, pat dry 3 pieces of chicken. Season each side with salt and pepper. Once the oil is hot, add the chicken skin-side-down to the pot and sear for about 4 minutes until golden. When done, transfer the chicken to the slow cooker on top of the sweet potato layer. Do the same with the rest of the chicken.

Step 4: Over the chicken, evenly sprinkle the rest of the spice mixture and garlic. Put the lid on and set to cook on low for about 4 1/2 – 5 hours until the sweet potatoes are tender and the internal temperature of the chicken reached 165 degrees.

Step 5: In the last 30 minutes of cooking, add the broccoli. You can also steam them in a bag following the package directions, seasoned with salt.

Step 6: To serve, place the chicken, sweet potatoes, and broccoli on a plate with a couple of spoonfuls of the sauce from the slow cooker. Enjoy!
